I have never been to Georgia, but I remember the first time i saw a TV show about this country and its wonderful foods humbled me. Chicken dumplings that are easy to prepare with divine flavor. My version of Hinkali contains an Asian flavors and makes the dumplings refreshing and different.
Ingredients:
For the dough:
2.5 cups of flour
1 egg
3 tablespoon of oil
Tablespoon of salt
8-12 Tablespoon of warm water (depend on the dough)
For the chicken filling:
400 g Minced chicken
Chopped parsley - large package
Chopped coriander Lemon zest (from 1 lemon) Ginger Gross
Soy sauce
Chopped garlic tooth preparation:
Prepare the dough:
1. Mix in flour, salt, egg and oil in a mixer bowl
2. Slowly add the tablespoons of warm water until the dough becomes uniform, neither too sticky nor too dry
3. Continue mixing in the mixer bowl for another 8 minutes until the dough becomes flexible
9. Wrap in plastic wrap and place in refrigerator for half an hour
Prepare the chicken filling:
1. In a bowl, mix all ingredients together long enough for all flavors to be separated
2. Rest in the refrigerator until the dough is ready
Prepare the Hinkali:
1. Divide the dough into 13 equal sized balls (the best method is to make the dough roll, divide it in half until 13 balls are formed)
2. Sprinkle flour on the work surface, roll each ball into a thin leaf of dough (it is best not to use too much flour so it will not be difficult to close the dough)
3. Put in the center of the dough leaf a tablespoon of the chicken filling
4. Close the dough leaf in a fan-shaped until it becomes a ball, rotate it and tear off the unnecessary edge (see sample video)
5. cook the dumplings 15 minutes in boiling water with salt, each time 5 dumplings with the pointy end up (depending on the pot, if you use a big pot you can cook more then 5 at a time, the main thing they can float not densely)
